For the Lasagna:

  • 12 lasagna noodles (use gluten-free if needed)
  • 1 large zucchini, thinly sliced
  • 1 large carrot, thinly sliced
  • 2 cups of fresh spinach
  • 2 cups of vegan mozzarella cheese (store-bought or homemade)

Instructions:

Step 1: Prepare the Tomato Sauce

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5-7 minutes.
